Vinification

The grapes are mechanically harvested at full maturity or just slightly overripe.  The selection of plots harvested for Anjou Rouge is based on the maturity of the grape, the sugar content and the berry flavours.  Yeast is added to aid the fermentation of the must. The stalks are removed at the moment of harvesting for a less acidic wine.  Maceration is carried out in stainless steel tanks with temperature controlled fermentation/ maceration.  The maceration time can vary from 6 to 10 days depending on the quality of the raw material, but always with the aim of perfect taste balance

Tasting Notes

Fresh on the nose with fruity notes of cherry, blackcurrant and raspberry on the palate Anjou Rouge is a velvety smooth wine, seductive by its flexible nature and silky tannins.

Serving

Fruity even when young, Anjou Rouge is a good accompaniment for everyday cooking, charcuterie, grilled meats, stews and light cheeses. 
Serve between 13 ° and 14 ° when it is young, between 15 ° and 16 ° when it has been kept a few years
